Game Day Snacks, with a Healthy Twist

So, if you know me, I love to decorate & over do anything I can get my hands on (obviously, I'm an event planner by trade), and that includes the Big Game this weekend. I am not a huge football fan, but I don't really have a choice in my house hold. If you know my husband then you know exactly what I am talking about. My husband is a die hard sports fan and football is top on his list. He is so bad, in fact during every pregnancy, I was warned that I was not allowed to give birth on a day ANY of his teams played or he would have to miss their birth. Lucky for me (and him) that wasn't an issue! Even though I am not a football fan I do enjoy watching the Big Game for the commercials & enjoy the food. Plus I have two boys so I have to make it seem like I am kinda interested in the same things (that's me being mom of the year...lol). I am starting the year off with a healthy kick (pun intended) so I wanted to share a few recipes that should be a sure hit, but with a healthy twist. Some of these recipes are as simple as opening up a box and slapping some extras on to it. Don't worry I wont tell if you don't. I am a mom of four so the simpler the better for me!



Honey Glazed Cajun Not So Chicken Wings



Ingredients:

2 bags of Gardein Plant Based Wings

2 tablespoons Cajun seasoning, divided

½ cup ketchup

¼ cup lemon juice

¼ cup honey

1 teaspoon dry mustard

oil for frying


Instructions:

Step 1 Heat Oil

Step 2 Toss chicken and 5 teaspoons Cajun seasoning in a large bowl.

Step 3 Place chicken in heated oil and cook 4 - 5 minutes

Step 4 While chicken is cooking, stir the remaining 1 teaspoon Cajun seasoning, ketchup, lemon juice, honey and dry mustard in a bowl and set aside.

Step 5 Once the chicken is done cover the wings with the sauce


Note: I have dabbled in out of being a vegan for years and I can tell you Gardein is the best product out there to to use to get that close to chicken taste and texture when trying to do things the fast way and use already made products.





Banana Split Bites


Ingredients:

3 Bananas 1/4 lb Cored Pineapple 6 Strawberries 1 cup Dipping Chocolate 1/4 cup Chopped Peanuts 12 Popsicle Sticks (or skewers)


Instructions:

Step 1 Cut strawberries in half. For each strawberry half, cut an equal size piece of banana and pineapple.

Step 2 Place pineapple on first, then banana and lastly strawberry.Place in freezer for 10 minutes.

Step 3 Line a tray with wax paper or parchment paper.

Step 4 Put chopped nuts in small plate to use for dipping.

Step 5 Melt chocolate by heating in microwave for 30 seconds, stirring and repeating until melted and smooth.

Step 6 Dip cold fruit in chocolate, then into nuts, then place on prepared tray.

Buffalo Not So Chicken Dip

Ingredients:

1 bag of Morningstar Veggie Pulled Pork 8 ounces of cream cheese 2 1/2 cup of shredded Mozzarella Cheese ( divide 1/2 cup for later) 1 cup Plain Greek Yogurt 1 cup Hot Sauce use a buffalo sauce


Optional Toppings: Green Onions & Fetta Cheese

Serve with tortilla chips, celery and carrot sticks or whatever you prefer


Instructions:

Step 1 Heat oven to 350°F.

Step 2 In a large mixing bowl, stir all ingredients together minus the divided 1/2 cup of shredded mozzarella & the optional toppings. 

Step 3 Transfer the mixture to a baking dish & spread evenly.

Step 4 Bake for 15-20 minutes until the dip is warmed through and starts to brown slightly around the edges. 

Step 5 Take the remaining 1/2 shredded mozzarella and place on top of dip and place back in the over for a remain 10 minutes.

Step 6 Remove and sprinkle with your desired toppings.  Serve warm.

Dairy Free Ice Cream Football Sandwiches

Ingredients:

Wooden Ice Cream Spoons (available here on Amazon)

Sharpie


Instructions:

Step 1 Using a Sharpie, draw football plays, referee stripes or team colors on wooden spoons

Step 2 Unwrap your ice cream sandwiches and lay them on a sheet of wax paper

Step 3 Pierce one end of the ice cream with a knife so that your wooden spoons can be inserted easily later

Step 4 Pipe football deign on the center of the sandwiches with white icing 

Step 5 Insert wooden spoons & place back in freezer until ready to serve.

Super Bowl Football Sandwiches

Ingredients:

Deil Meat of choice

Sliced cheese of choice

2 bags of Publix Hoagie Rolls 4-Count

Condiments of choice

Lettuce and other sandwich toppings of choice

Cream Cheese softened

Sandwich size zip loc bag


Instructions:

Step 1 Make sandwich to your own liking

Step 2 Place cream cheese in a plastic bag

Step 3 Cut a small hole in the corner of the bag

Step 4 Pipe football laces on sandwiches

Super Bowl Fiesta Dip

Ingredients:


1 Can black beans, drained

2 medium size tomatoes

1 Can of whole kernel corn, drained (4.5-ounce)

2 ripe avocado, peeled, pitted and diced

4 tablespoons fresh chopped cilantro

1/2 red onion, diced

1 red pepper chopped

2 limes for juicing

Salt for taste

1 bag of tortilla chips


Instructions:

Step 1 Chop and dice tomatoes, avocado, cilantro onion & red pepper

Step 2 In a large bowl, stir together all ingredients. Including juice from limes and salt if desired.

Step 3 Cover and refrigerate 3-4 hours, stirring occasionally

Kansas City Chiefs Popcorn

Ingredients:


10 Cups of Popped Popcorn

3 tbsp. Butter (Sweet Cream, Salted)

3 cups Mini Marshmallows

M&M Minis – Red and Yellow

Pretzel M&M's – Red and Yellow

Chocolate Chips (Dark, Semi-Sweet or Milk Chocolate)


Instructions:

Step 1 Pop 10 cups of popcorn and salt liberally and place in a large bowl.

Step 2 Melt 3 tablespoons of butter in a medium sauce pan.  Once the butter is melted, add 3 cups of mini marshmallows.Stir until the marshmallows are melted.  Turn off the heat as soon as the last marshmallow has melted.

Step 3 Pour 3/4 of the marshmallow mixture over the popcorn in the bowl and then gently fold the popcorn with a spoon until most of the kernels are covered in mixture.

Step 4 Pour the marshmallow popcorn onto a prepared cookie sheet.Drizzle the remaining marshmallow mixture over the popcorn on the cookie sheet.

Step 5 Sprinkle the candy and sprinkles over the popcorn.Allow the popcorn to cool. Break apart into pieces and serve.

Sweet & Salty Ultimate Game Day Snack Board

Ingredients:

Sweets:

Yogurt pretzels

Candy gummy candy, chocolate, jelly beans, licorice

Chocolate covered nuts

Trail Mix

Cookies

Caramel corn

Kettle corn

Homemade treats cookies, blondies, brownies

Fruit, grapes, strawberries, berries, apple slices

Dried fruit apricots, mango, cranberries, blueberries

Salty:

Potato chips

assorted Chip dip

Pretzels

Cheese balls

Crackers assorted

Peanut butter pretzels

Mixed nuts

Pita chips

Hummus

Popcorn

Cheese a few varieties

Salami

Beef jerky

Cut up vegetables


Instructions:

Step 1 Arrange the sweet and salty snacks on a large board. If you don't have a large board, you can use a few platters and bowls. Set the sweet and salty spread out for your guests and let them enjoy!

Step 2 Note-the above items are just ideas. Get creative and incorporate your favorite sweet and salty snacks!
